Gorgonzola DOP can be either Sweet or Piccante. It’s impossible to mistake one variety for the other because both of them have unique features.
Piccante: it has a harder past Flavours are strong, intense and sharp with a pungent, spicy bite coming early on. It takes a minimum of 80 days ageing to let Gorgonzola demonstrate its unique characteristics.
