Guanciale is an Italian cured meat product prepared from pork jowl or cheeks. Its name is derived from guancia, the Italian word for ‘cheek’. Two of the most common or well-known dishes that feature guanciale include carbonara and amatriciana, which both include some of the meat in the sauce.     Pros:

    Get a more dimensional taste and aroma.

    Cons:

    GuaGuanciale, an Italian cured meat, is quite salty and requires some technique to be used properly.
